The rules don't seem to indicate that you cannot play it if not everyone would get a cookie piece - currently only one player would take a cookie piece if this were played as only one player has a piece so far. There are no threads on BGG discussing a ruling on this sort of scenario either. Don't know if you know more from the publisher/designer.
The rules indicate that the token should be playable at any point, including during another's turn:

In your case, you received the marker after the trick was completed, so you were no longer there during your play action.
