I've built a Sand Producer building which transforms one wood into two sand. At no point during the game am I able to interact with it, even though I have plenty of wood. When you can activate it you will normally see a small thunderbolt icon on the tile. You should be able to activate it at any moment in your turn and you just have to click it, the bar message will change and you'll have the action available in the action pane.

The rulebook says you can activate the Processing building at any time during the game, not just on your turn.

Nevermind, I understand now. Processing buildings can only be activated when you're activating a card's abilities. I guess it was easier to program that way.
